The water's temperature cannot be intentionally altered, though a container full of ice can be melted to form liquid with a temperature just above freezing. Boiling water that's transformed is cooled to the temperature of bath water.
Benefits
Purified water used in cooking and food preparation helps ensure a better meal, effectively improving the taste of food by one measure (for example, from "grub" to "chow"). The spell's effect also prevents any possibility that the food being eaten is poisoned (unless a dose is added somehow after the spell is cast).
Additionally, purified water can be crucial for procedures such as cleaning wounds, or in laboratory settings, in seeking complex concoctions. Pure water is also helpful with beverage processes such as brewing or distilling.
Reverse
The reverse of the spell, contaminate, imbues water with a strong metallic and mineral flavour by summoning minuscule quantities of each element. This incantation cannot produce parasites or toxins, nor can it change water into wine or any similar substance. Both unholy and holy water are spoiled by the use of the spell's reverse.
In some magical or cultural contexts, there might be rituals or alchemical processes that require contaminated water. The spell might also act as a deterrent against unwated wildlife or even to starve an enemy force of water, especially in desert conditions.
