In the game's time period, "professional" soldiers form the core of medieval armies and were essential in holding a position in battles and sieges. Possessing a good morale (once continuously active under a given liege), soldiers received proper training and had access to expensive equipment; in D&D terms, this translates to more hit points, a better THAC0 and multiple weapon proficiencies. That said, soldiers are non-levelled, though many levelled fighters, paladins and rangers are given time in soldier ranks during their training.
